The Werribee Football Club and Invicta Performance Athlete Wellness Hub present their healthy zucchini slice recipe. 
Ingredients
Zucchini Slice
2 medium zucchinis, grated
3 medium carrots, grated
1 brown onion, finely chopped
2 garlic cloves, crushed
3/4 cup self-raising flour
3 eggs, lightly beaten
1/3 cup skim milk
60g (about 1/2 cup) shredded cheese
3 tbsp extra virgin olive oil
1 cup shredded chicken breast or shredded ham
Extra virgin olive oil spray
Cracked pepper
1-2 tsp dried herbs of your choice (e.g.
rosemary, thyme, oregano or a mix!)

Preheat oven to 160 degrees (fan-forced). Lightly spray a square tray with extra virgin olive oil.

Grate vegetables and prepare onion and garlic. Combine carrot, zucchini, onion, cheese and flour in a mixing bowl.
Add meat (if using) and combine.

Season with pepper and herbs of your choice. Add in milk, eggs and oil and mix well.
Spread mixture evenly onto baking tray.

Bake for 30-35 mins or until golden brown. Serve with a side salad or along side some roasted veggies for an easy and healthy meal!
