Bircher Muesli from the Werribee Football Club

The Werribee Football Club and Invicta Performance Athlete Wellness Hub present their healthy bircher muesli recipe. 
Ingredients
Bircher Muesli
2 gala apples, grated
2 cups rolled oats
1 cup apple juice
1 cup vanilla yoghurt, plus extra to serve
Large pinch ground cinnamon
1/2 cup chopped dried apricots or sultanas
1/2 cup flaked almonds
1/2 cup walnuts
1/4 cup pepitas (pumpkin seeds)
Fruit to serve (try sliced banana, frozen (thawed) or fresh blueberries, raspberries or mixed berries, or sliced kiwi fruit)
Method

Mix the grated apple, rolled oats, apple juice, yoghurt and cinnamon in a bowl until well combined.

Cover and place in the fridge for 1 hour or overnight.

Combine the dried fruit, flaked almonds, walnuts and pepitas in a small bowl.

Stir the fruit & nut mixture through the muesli with 1 cup of yoghurt.

To serve, top with fresh fruit, honey, and extra yoghurt as desired.
