The Werribee Football Club and Invicta Performance Athlete Wellness Hub present their healthy banana bread recipe.
Ingredients
Banana Bread
1/2 cup rolled oats
1 cup plain or wholemeal flour
1 1/2 tsp bicarbonate of soda (baking soda)
3 overripe bananas
1/2 cup greek yoghurt
1/3 maple syrup
1/4 tsp salt
2 large eggs
1/2 cup chocolate chips (optional)
Preheat oven to 175 degrees Celsius. Line a loaf tin with baking paper or spray lightly with olive oil.

Blitz oats in food processor or juice blender for 30 seconds until rough flour is formed.
In a large bowl, combine flour, oats, bicarb soda and stir well to combine.

Mash/blend bananas and pour into large bowl along with lightly whisked eggs, yoghurt, maple syrup and salt.
Mix well to combine. Add chocolate chips in if using, and fold in gently, being careful not to over-mix.

Pour batter into prepared tin and spread evenly. Bake for 40-45 minutes.
Remove from oven and allow to cool completely.
